Easy Chicken Taquitos


Ingredients

1.1 (9 3/4 to 10-ounce) can 98-percent fat-free chunk white chicken breast in water, drained and flaked
2.1/2 cup salsa, plus more, as dip, optional
3.1/3 cup shredded fat-free Cheddar cheese
4.1/4 teaspoon dry taco seasoning mix
5.8 (6-inch) yellow corn tortillas
6.Fat-free sour cream, as dip, optional

Directions

1.Preheat the oven to 375 degrees F.

2.In a medium bowl, combine the chicken and salsa, and mix thoroughly. Cover and refrigerate for 15 minutes.

3.Remove chicken mixture from the refrigerator, and drain any excess liquid. Add cheese and taco seasoning, and mix to combine. This is your filling. Set aside.

4.Prepare a baking sheet by spraying it with nonstick spray. Set aside.

5.Dampen 2 paper towels, and place tortillas between them. Microwave for about 1 minute, until tortillas are warm and pliable.

6.Place one tortilla flat on a clean dry surface (keep the rest between the paper towels), and spoon about 2 heaping tablespoons filling onto the tortilla. Spread it evenly across the entire surface, and roll the tortilla up tightly, so that you have a cigar-shaped tube. Secure with toothpicks, if needed, and place seam-side down on the baking sheet. Repeat with remaining tortillas and filling.

7.Bake in the oven until crispy, 14 to 16 minutes.

8.Allow to cool for 5 minutes. Serve with sour cream and additional salsa for dipping, if using. Enjoy!

Bourbon Chicken Recipe


Ingradients;

3 lbs boneless chicken breasts, cut into bite-size pieces
1 1/2-3 tablespoons olive oil
1 1/2 garlic clove, crushed
3/8 teaspoon ginger
1 1/8 teaspoons crushed red pepper flakes
3/8 cup apple juice
1/2 cup light brown sugar
3 tablespoons ketchup
1 1/2 tablespoons cider vinegar
3/4 cup water
1/2 cup soy sauce

Directions;

1.Heat oil in a large skillet.

2.Add chicken pieces and cook until lightly browned.

3.Remove chicken.

4.Add remaining ingredients, heating over medium Heat until well mixed and dissolved.

5.Add chicken and bring to a hard boil.

6.Reduce heat and simmer for 20 minutes.

7.Serve over hot rice and ENJOY.

Crock Pot Turkey Chili Recipe


Serving per Recipe 4

Ingredients

    1 lbs ground turkey, extra lean or 1 lb leftover cooked turkey, chopped
    1 1/2 garlic cloves, crushed
    1 1/2 large onions, diced
    2 large celery stalks, chopped
    1 1/2 large bell peppers, chopped
    7 oz can red kidney beans, drained & rinsed
    7 oz can any white beans, drained & rinsed
    14 oz can tomato sauce or crushed tomatoes
    1 cups water or low sodium chicken broth
    1/2 tbsp chipotle pepper in adobo sauce, minced or to taste
    1/2 tbsp chili powder
    1/2 tbsp taco seasoning, all natural
    1/4tsp salt
    1/4 tsp freshly ground black pepper
   
    And also you need cooking spray

Directions

    Preheat large pan on high and add ground turkey. Cook till brown, stirring and breaking into tiny pieces with spatula, occasionally. Transfer to a large slow cooker. If using leftover cooked turkey, skip the browning step.
come back pan to medium heat and spray with cookery spray. Add garlic, onion, celery, bell peppers and saute for five minutes or till golden brown. Transfer to a slow cooker.
Add remaining ingredients to slow cooker, cover and cook eight hours on Low or four hours on High. cut back cookery time to five hours on Low and three hours on High.

Crispy Onion Chicken Recipe


 It is so hard to find a meal that my whole family will eat.  With a picky three year old, I will often find myself making a bowl of easy mac avoid that mealtime meltdown.  This recipe, however, is an answer to my picky eater prayers!  To quote my three year old, "It is like a big, yummy chicken nugget!"  I'll take it!
Ingredients:

4 boneless, skinless chicken breasts
3/4 cup honey mustard
2 cups French's French Fried Onions, crushed

Directions:

Preheat oven to 375 degrees.  Dip each chicken breast in honey mustard then coat in crushed french fried onions.  Place in a baking dish lined with foil and sprayed with nonstick cooking spray.  Cook for 30-35 minutes, or until cooked through.
